Healthy Climate-Friendly Recipes

 We have developed a number of recipes, all of which have been kid-tested and approved. These recipes are healthy for kids (and adults) and healthy for the planet, too. Our recipes have been developed in partnership with Moosewood Restaurant, Candle Cafe, with individuals who work in the Ithaca City School District who are originally from other countries, and through a recipe contest with the finals held at the James Beard House in New York City. You can click on the following links to get quantity recipes for schools, family size recipes, and a recipe booklet for kid’s classes and cooking at home. Currently, we are in the process of updating the recipes, so that all recipes will be available in both quantity and family size. 

Family Size Recipes

 We are excited to present our completely updated recipes. Many of these recipes are already served in schools across the United States. Our next project is updating all of the Quantity Size recipes, and there will be a quantity size recipe created for every recipe in this Family Size Recipe document. These recipes are not only for families to enjoy at home but can be used by foodservice professionals to determine which recipes they’d like to offer on school menus, for the cooking section of Family and Consumer Sciences classes, and in after school cooking classes. Quantity Recipes for Schools

Quantity size recipes are designed for schools – they fulfill the USDA M/MA component requirement of the lunch meal. We are in the process of updating and expanding our quantity recipes. The link above is for those recipes which have been updated, but it is not yet our entire collection. The old collection is here. Once we complete our quantity recipes, there will be a corresponding recipe for each recipe that is in our “Family Size Recipes” below.

The recipes at this link are for a family sized healthy holiday meal. With over 70% of health conditions caused by lifestyle choices, the consumption of animal products one of the top causes of climate change, food justice issues, and the suffering of animals, these recipes are perfect If you are considering creating new holiday traditions. Examples of Delicious, Earth-Friendly Recipes to Serve in Schools

Awesome Bean Burger

This burger was named by a fifth grader! It also goes by the name of Happy Burger. It’s full of black beans, sweet potatoes, oats, and spices. It’s easy to make and it freezes well, so you can always have some on hand for students wanting a plant-based entree, or at home. They also taste great cold as a snack.

Fiesta Mexican Lasagna

This is the first recipe we made in Ithaca, in partnership with Moosewood Restaurant, and middle school students. Instead of noodles, corn chips are substituted. You can also leave out the corn chips and serve the chips seperately to dip in Fiesta Mexican Dip!

Golden Chinese Croquettes

These delicious croquettes are served with orange ginger sauce. They take a little more labor than most recipes, but can be served occasionally as a special treat. They’re fun to make at home!

Ms. Patel's Rajma & Rice

This recipe with the flavors of India was developed by… Ms. Patel! Ms. Patel is a teaching assistant and after school teacher at an Ithaca elementary school. This recipe is very easy to make, and the per serving cost is about .35 cents! Kids love it.

North African Red Lentils

This incredibly delicious recipe comes together quickly with lentils and vegetables simmering together in a fragrant, spicy sauce. Couscous is tiny pasta, not a whole grain.

Moroccan Beans & Greens

Taste the enticing flavors of a far away land. This delicious kidney bean recipe includes spinach, orange juice, ginger, and other spices.

Black Beans & Plantains on Rice

This is our version of this hearty traditional Latin American dish, created for us by the former Candle Cafe in New York City. This is a favorite that has been served in New York City Schools.

The Whole Enchilada

This delicious take on the enchilada includes shredded or cubed butternut squash, kidney beans, and salsa. It’s delicious in the fall or any time of year!
